Cook pasta according to package directions. In a large saucepan, melt butter. Stir in flour making a roux. Gradually stir in half and half, whisking until thickened. Stir in salt. Remove from heat. Add cheese, stir until cheese melts. Top with fancy shredded mild cheddar cheese.
