     Chocolate Chip Muffins

Servings   12 muffins
Ingredients
1 egg
3/4 c. milk
1/2 c. veggie oil
2 c. flour
1/2 c. brown sugar packed
3 tsp baking powder
1 tsp salt
1 tsp vanilla
2/3 c. chocolate chips
 
Instructions
1. Beat egg in a large bowl. Stir in milk and oil.
2. Stir in remaining ingredients except chocolate chips, just until flour is moistened. Fold in chocolate chips.
3. Full muffin cups 3/4 full. Bake at 400 degrees F until golden brown for 25 minutes.
