     Lentil Salad w/ Cauliflower florets

Ingredients
1 c. lentils
2 c. cauliflower/broccoli florets
2 fresh chilies, chopped or cayenne pepper
1/2 c. cilantro chopped
juice of 1 lemon
1/4 c. olive oil
salt and pepper, to taste
yogurt (optional)
 

Instructions
Wash lentils. Boil until tender (2.5-1 - water-lentils).
Add chili, cilantro and cauliflower/broccoli and steam until color brightens, 3-5 min.
Remove from heat. Add lemon, olive oil, salt and pepper.

Serving Suggestions
Drizzled w/ yogurt.
