     Homemade Whole Grain Waffles

3 eggs, separated
1 cup plain yogurt (I use homemade)
1/2 cup milk
1/2 cup butter, melted
1-2 tablespoons brown sugar, honey or maple syrup
1 teaspoon vanilla (optional)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups whole wheat flour (I use freshly ground)

Beat egg whites in a small bowl until they are stiff In a larger bowl, beat eggs and milk then add the rest of the ingredients one at a time, mixing well after each addition Gently fold in stiff egg whites To cook the waffles, follow manufacturer’s directions for your particular waffle maker; you may wish to lightly grease the waffle maker before pouring the batter on the first time
TOPPING SUGGESTIONS- Butter Maple syrup Powdered sugar Half honey, half maple syrup blend Chopped fruit Pureed strawberries and pineapple (delicious!) Nut butter Whipped cream
