     Sweet Potato Casserole

Ingredients
3 cups mashed sweet potatoes
1/2 cup sugar
1/2 tsp salt
2 large eggs
1/2 milk
1/2 tsp vanilla
4 Tbsp butter, melted
TOPPING
 
1/2 cup light brown sugar
1/2 cup flour
4Tbsp butter, melted
1/2 chopped nuts
Preheat oven to 350 degrees

Instructions
Cook whole, unpeeled sweet potatoes in boiling water until fork tender. Remove from heat and allow to cool. Remove skins and mash potatoes.
Whisk together eggs, milk, vanilla and 4 Tbsp melted butter. Stir into mashed sweet potato mixture until smooth and well blended. Spoon mixture into lightly buttered 2 quart baking dish. Bake for 35 to 45 minutes.
TOPPING Combine all ingredients and sprinkle on top of sweet potato mixture. Bake for 1 hour.
