     Black bean and corn Quesadillas

Ingredients
1 can refried black beans (I use the WF’s brand because they don’t use lard. You can also just smash
1 bell pepper, chopped
1/2 a bag of frozen corn (try to get organic to avoid GMOs)
2 tbsp olive oil
1 large, juicy lime
1 tsp cumin
1 tbsp chili powder (I love my chili powder!)
1/2 tsp cayenne
Salt and pepper to taste
 
Corn or sprouted grain tortillas (I used the Ezekiel sprouted grain and WF’s corn, which is only 99
Pepper jack, cheddar, or mozzarella cheese

Instructions
Place the onion, corn, and bell pepper on a baking sheet (you may need more than one) and cover with olive oil. Sprinkle with salt and pepper. Place the sheet in the oven at 375 degrees. Cook for about 20-25 minutes. Stir every 5 minutes to make sure everything cooks evenly. In the meantime, open the can of refried black beans and dump into a large bowl. Add lime juice and spices. When the vegetables are browned, dump them into the bowl with the beans and stir. Use this filling to make a quesadilla with pepper jack cheese and tortillas in a skillet or to stuff taco shells or as a dip with chips! Add guacamole, avocado, cilantro, or extra spices, if you wish. Enjoy! If you want to turn up the heat, be sure to add a jalapeno or two to the roasting mix. Also, add the extra 1/2 tsp of cayenne.
