2 cups fruit ( pick one or mix- plums, peaches, or berries)
3 T cornstarch, divided
Instructions
1. Adjust the oven rack to the lowest position and
heat to 400 degrees.
2. Mix, cream cheese, sugar, 2 T of the cornstarch
and the egg yolk in a medium bowl.
3. In a separate bowl mix the fruit, 2 T of sugar,
remaining cornstarch, and vanilla.
4. Roll out the pie dough on a floured surface to
13 in.
5. Slide onto a cookie sheet or pizza pan and
spread evenly with cream cheese mixture, leaving a
2-inch border.
6. Scatter fruit evenly over the cream cheese
mixture.
7. Fold the pastry border over the fruit. Brush
dough perimeter with the egg white and sprinkle with
a little sugar.
8. Bake for 30 minutes.
