     Easy Coconut Rice

Ingredients
2 C. Thai jasmine rice
1 C. full fat coconut milk
2 C. water
1/2 tsp. salt
2-3 Tbsp. shredded coconut
 

Instructions
Place rice in a pressure cooker (or rice cooker). Add water, coconut milk, salt and shredded coconut. Stir well. Cover and set heat to high until full pressure is reached. Turn to medium for 2 1/2 minutes. Remove from heat; remove lid after 10 minutes. Fluff rice with a fork and cover lid for 20 minutes. Uncover and serve.
