     Tomatoe Preserves

Ingredients
4 lbs. tomatoes
2 lbs. sugar
Pinch salt
1 tsp vanilla
 

Instructions
Peel and cut tomatoes into quarters, add pinch of salt, cook over medium heat. Tomatoes will form their own juices. Continue stirring and cook until mixture begins to thicken, about 15 to 25 minutes. Add sugar and cook slowly until sugar is dissolved. Keep stirring. Add vanilla. Pour into sterlized jars and seal.
Note- Recipe from Edna ( Schievelbein) Felps from Bergheim. She noted Tomatoes were considered a staple in our farm house. One of my favorite after school treats was homemade bread and tomato preserves along with home made pork sausage.
