     Tex Mex Pasta Salad

Ingredients
1 lb uncooked radiatore pasta ( short coiled pasta)
1 1/2 lb ground beef
2 tsp olive oil
4 garlic cloves, minced
2/3 c water
1 (1.25 oz) taco seasoning packet
2 c grated cheddar cheese
2 c chopped tomatoes
1/2 c chopped fresh cilantro
 
1/2 c chopped green onions
1/2 c sliced black olives
1 (15.5 oz) can black beans, rinsed and drained.
2 Tblsp. fresh lime juice
1/2 tsp salt
1/4 tsp cumin
1 (8 oz) container sour cream
Salsa optional

Instructions
Cook pasta according to package instructions. Drain and rinse with cold water. Heat oil in large skillet over med high heat. Add garlic and suate for 1 minute. Add ground beef and cook until browned. Stir in water and taco seasoning; bring to a boil. Reduce heat and simmer 4 minutes or until liquid almost evaporates and ground beef is done. stirring frequently. Remoe from heat and cool slightly. Combine pasta, ground beef, shredded cheese, tomatoes, cilantro, green onions, black olives, and black beans in large bowl. Combine lime juice, salt, cumin, and sour cream stirring until well blended. Pour over mixture toss gently to coat.
