     Summer Garden Gazpacho

48 1/3 oz cans diced tomatoes, chilled (29 oz at home)
24 1/6 oz chilled beef broth (14 1/2 oz at home)
1 2/3 oz extra virgin olive oil (1 oz at home)
20 oz seedless cucumbers, diced small (12 oz at home)
20 oz onion, small diced (12 oz at home)
20 oz yellow sweet bell pepper, diced (12 oz at home)
20 oz green bell pepper, diced (12 oz at home)
1 2/3 oz minced garlic (1 oz at home)
16 2/3 oz Rotel, chilled (10 oz or 1 can at home)
3 1/3 oz red wine, sherry or cider vinegar (2 oz at home)
1 2/3 oz fresh parsley, basil and cilantro chopped (1 oz each at home)
20 oz chilled V-8 or tomato juice (12 oz at home)

Gather all utensils, tools and pre-measured ingredients. Clean, prep and dice all vegetables. Combine all ingredients. Chill for service. Serve in 12 oz bowls with 1 1/2 inch slice of crusty bread.
