In a bowl, combine the first eight ingredients; mix well. Shape into
eight patties. In a skillet, fry patties in butter over medium heat for
3-4 minutes on each side or until heated through. You can use
evoo but I would use a flavored one of your choice.
I like this lightly mixed and include the salmon bones but remove
the silver skin.
Drizzle with lemon juice and garnish with your favorite green
(parsley, cilantro, or green onion).
My favorite sides for this would be mac & cheese and green beans.
