In a medium skillet, cook chorizo in olive oil until crisp, 3-4 minutes. Toss 1 small head lettuce, 1/2 sliced small apple, manchego and chorizo with lemon-garlic dressing
Whisk together 1/3 c olive oil, 3 tbsp fresh lemon juice, 1 clove crushed garlic, salt and pepper.
