     Chicken and Rice Casserole

Ingredients
boneless/skinless chicken breast or thighs to cover top of casserole
3 cups chicken broth
1 cup Zesty Italian Salad Dressing
2 cups Uncle Ben's Converted rice (uncooked)
Preheat oven to 350 degrees
 

Instructions
Salt and pepper chicken and sear on both sides in small amount of olive oil and butter, set to side. Bring chicken broth and Italian dressing to boil in medium sauce pan. Spray 2 quart casserole, add boiled liquid and rice. Lay chicken part on top and bake for 1 hour.
