     Greek/Ceasar/Ranch Dressing Variations

Ingredients
1/2 cup plain Greek Yogurt
1/2 cup mayonnaise (substitute buttermilk for low-fat version)
1 small clove garlic, minced or crushed
sprig of fresh oregano or 1/2 tsp dried
2 teaspoons red wine vinegar (1 if using buttermilk)
1 teaspoon lemon juice
3 tablespoons water (omit or decrease if using buttermilk)
1 tablespoon plus 1 teaspoon ranch dressing powder (I use Penzy's)
 

Instructions
Put all ingredients in a blender. Blend until smooth. Use more or less water depending how thick you like your dressing.
Serve over chopped green and red peppers, fresh tomatoes, cucumbers, onions, feta cheese, and kalamata olives and romaine lettuce for a Greek salad. Also good drizzled over grilled romaine hearts. (I buy them at Trader Joe's. Cut them in half lengthwise, brush with olive oil, sprinkle with salt and black pepper, and grill over medium flame 2 or 3 minutes each side)
