3 c oatmeal (quick cooking) or multi grain oatmeal
1 c. whole wheat or white flour
1/2 t. baking soda
1/2 t. baking powder
3/4 t. cinnamon
1/4 t. nutmeg
1 c. honey/molassess/ brown sugar or any combo
1 t. vanilla
1 c. unsweetened applesauce
2/3 c. raisins (or more)
walnuts, chopped (lots)
2 eggs, beaten/stirred (optional)
Instructions
Preheat oven to 325-350 degrees. Spray cookie sheet with nonfat cooking spray or grease lightly.
In large bowl, combine oatmeal, flour, baking soda, baking powder, cinnamon, nutmeg and raisins. Mix well. Add sugar/honey/molasses (any or all), vanilla and eggs. Mix well. Add applesauce until desired thickness. Add nuts.
Spread on cookie sheet and bake 20-30 minutes at 325, depending on chewy or crispy.
Note: I use about l/2 c. (handful) raw brown sugar, and "dump" in some honey and/or molasses. I have also added raw apples or bananas to mixture. Use your imagination.
