     Stuffed Vine leaves

Ingredients
3 cups Cauliflower
˝ cup olive oil
1 clove garlic
˝ cup pine nuts
3 tablespoons lemon zest
˝ teaspoon cinnamon
2 tablespoons lemon juice
1 teaspoon salt
5 spring onions
 
1 cup sun dried tomatoes, soaked for 2+ hours, then chopped into thin strips
2 cups tightly packed fresh mint, minced
˝ cup raisins, roughly chopped

Instructions
Pulse cauliflower in food processor until it has a rice consistency and transfer to large bowl. In blender place olive oil, pine nuts, lemon zest, cinnamon, lemon juice, sea salt and spring onions and blend until creamy. Add this to the cauliflower and mix well. Add sun dried tomatoes, mint and raisins to the mixture and mix again. I use romain lettuce leaves or any type of green to wrap this in. I didn’t have luck with the “vine leaves”. This mixture is good on anything. I have also used it on rawvolutions onion bread. YUM!!
other spicing: 2tbsp black pepper 2 tbsp paprika 2 tbsp cumin 1 tbsp coriander 1 tbsp cloves - ground 1tsp numeg 1 tsp cinnamon 1/2 tsp ground caradamom

use with Mint Cashew Aioli [ with or without mint]
