two 15 ounce cans great northern beans, drained and rinsed
quarter tsp ground black pepper
1 tbsp minced parsley or cilantro
Instructions
spray large pot with cooking spray, add onions and brown over medium high heat for 3-4 minutes
add in garlic and saute for 2-3 minutes before adding the chicken breast halves
Brown chicken on each side for 3-4 minutes, then add water, lemon pepper and half tsp cumin.
Bring to a boil, then reduce heat and simmer until chicken reaches an internal temperature of 165 degrees and is tender (about 10-15 minutes)
Carefully remove chicken to a cutting board, slice thinly then cut into half pieces.
Add cut chicken back into chili with corn, chilies, lime juice, black pepper, and remaining cumin; bring to a boil.
Add beans and simmer for 10 more minutes.
Sprinkle parsley or cilantro over top and serve hot.
