     Oven Roasted Sea Bass with Lemon, Garlic, and Herb

Ingredients
2 whole Sea Bass (1lb each) scaled and gutted
3 garlic cloves, thinly sliced
1 lemon, thinly sliced
1 cup fresh parsley leaves
6 thyme springs
2 Tbsp olive oil
Sea salt, freshly ground pepper
 

Instructions
Preheat oven to 425 F. Stuff the cavity of each fish with garlic slices, 2 to 3 lemon slices and herbs. Season the fish inside and outside with salt and pepper.
In a larrge, nonstick, ovenproof skillet, heat olive oil over medium-high heat until shimmering. Add the Sea Bass and cook until the skin is browned (3 minutes per side). Move the pan to the oven and roast for 7-8 minutes, until almost cooked through. Turn the oven to broil and broil for 2 minutes or until the skin blisters. Serve Immediately.
