     Mustard Vinaigrette Leeks

Ingredients
6 leeks
2 tbsp dijon
2 tbsp red wine vinegar
2 cloves of garlic
1 tbsp basil
1/4 cup olive oil
1/4 tsp salt
1/8 tsp pepper
 

Instructions
Boil water, add leeks, reduce heat simmer until tender, 15 minutes. Drain. In large bowl whisk mustard, vinegar, garlic, and basil. Slowly add oil, salt and pepper. Loss leks with vinaigrette.
