     Seared Scallops with Bacon

Ingredients
6 slices bacon
1 pound sea scallops
Salt
Pepper
2 tbsp shallots, minced
1 cup white wine
2 tbsp butter
 

Instructions
Cook bacon over medium heat, until crisp, remove from pan. Remove excess fat, add scallops, sprinkle with salt and pepper. Cook until golden brown, 2 minutes per side. Remove from pan. Add shallots, when cooked through, add wine. Cook until reduce by half, stir in butter. Pour over scallops, top with bacon.
