     Stacked Enchiladas

Ingredients
1/4 cube butter
1 onion, diced
1 green pepper, diced
Appx 4-6 heaping Tbsp. flour
1 can enchilada sauce (mild)
2 (46 oz) can tomato juice or use part diced tomatoes
1/2 tsp. chili powder
1/2 tsp. salt
 

Instructions
Melt butter and cook onion and peppers until soft. Add flour a little bit at a time to make a roux. Then add enchilada sauce, tomato juice, tomatoes, and seasoning. Heat and simmer. Layer with a corn tortilla, enchilada sauce, meat if you wish, cheese, lettuce, etc. Each person can decide how many corn tortillas they want. Then top with Ranch dressing or Sour cream.
