     Zucchini Bread

Ingredients
2 eggs
1/2 c. vegetable oil
1 c. sugar
2 tsp. vanilla
1-1/2 c freshly shredded zucchini
1/4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
 
1/4 tsp. ground cloves
1-1/2 c. gluten free flour

Instructions
Beat eggs, sugar, and oil in a large bowl with electric mixer. Add vanilla and mix well. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and cloves.
Add dry ingredients to wet ingredients and stir by hand to mix well. Add zucchini and stir to combine.
Pour into a well greased 9x5 loaf pan and bake at 350 for 60-70 mins or until toothpick inserted comes out clean.
