     Vegan Mac N' Cheese

Ingredients
1 - 8 oz. box of uncooked macaroni (can use gluten-free)
1/3 c. and 1 T. vegetable oil, divided
1 medium yellow onion, finely chopped
1 - 16 oz. unsweetened MimicCreme (almond and cashew creme)
1/3 c. lemon juice
4-5 oz. roasted red peppers (about 3 peppers if roasting yourself)
3 T. nutritional yeast
1 tsp. garlic powder
1 tsp. onion powder
 
salt, pepper, and hot sauce to taste
corn flakes (optional)

Instructions
Preheat oven to 350 degrees F Cook macaroni according to package directions. Place in 9x13 baking dish or 3 qt. casserole dish.
Saute onion in 1 T. vegetable oil and mix into the macaroni.
Mix all other ingredients in a blender (I do not reccommend a food processor as this is very thin and can leak out) and stir into macaroni and onion mixture.
Sprinkle the top with crushed corn flakes if desired. Bake for 30-45 minutes until heated through.
Serving Suggestions
Serve with steamed vegetables or a garden salad.
