     Vegan No-Bake Cookies

Ingredients
2 c. sugar
1/2 c. coconut milk (almond or soy work too)
1/4 lb. Earth Balance butter (non-dairy butter)
3 T. cocoa
1 tsp. pure vanilla
1/2 c. natural peanut butter
3 c. old-fashioned oats (or quick oats)
 

Instructions
In a medium sauce pan, combine sugar, coconut milk, non-dairy butter, and cocoa.
Bring to a boil over medium-high heat and boil for 2 minutes stirring constantly. This is a very important step. If not done correctly, the cookies might be grainy or might not harden.
Remove from heat and add vanilla, peanut butter (stir until melted), and oats.
Drop by teaspoonfuls onto waxed paper. Let cool until hardened. Place in refrigerator or freezer if you're in a hurry!)
