     Chicken Corn Soup

Ingredients
Whole Roaster Chicken
Celery
Onions
4 hardboiled Eggs
Corn - prefer fresh corn cut off cob (about 12 ears of corn)
carrots - cut on the diagonal
Salt and Pepper to taste
Parsley
Chicken bouillon cubes
 
celery seed

Instructions
Place whole chicken in large soup pot and fill with water/ covering chicken. Add quartered onions (2) Boil Add some chicken bouillon cubes and salt and pepper. (For my large pot, I used about 4 cubes) Cover pot. Hard-boil 4 eggs and chop.
After chicken is cooked and tender.(about 1 hour at a rapid boil) Cool chicken in pot of liquid. Once cooled, remove chicken from pot. Strain the liquid. Clean chicken from bones and return to pot. Add more chicken bouillon and more water if needed.
Add chopped celery, carrots and corn to pot. Add seasoning to taste. Add chopped eggs.
Let soup simmer for hours until tender.
Serving Suggestions
Serve with Dinner rolls
