Heat milk and heavy cream with cinnamon, ginger and nutmeg in a
saucepan.
|

Beat 12 egg yolks with 1 cup of sugar and add to the milk and
cream. Continue to cook while whisking until thick.
|
|
|
Beat 12 egg whites until stiff peaks form, then add 1/3 cup sugar.
Whisk into the hot milk mixture and chill.
|
|
|
Top with a shot of rum or bourbon if desired.
