     Classic Eggnog

Ingredients
1 quart milk
1 quart heavy cream
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
12 eggs (separated)
1 1/3 cup sugar
rum or bourbon
 

Instructions
Heat milk and heavy cream with cinnamon, ginger and nutmeg in a saucepan.
Beat 12 egg yolks with 1 cup of sugar and add to the milk and cream. Continue to cook while whisking until thick.
Beat 12 egg whites until stiff peaks form, then add 1/3 cup sugar. Whisk into the hot milk mixture and chill.
Top with a shot of rum or bourbon if desired.
