     Bow Ties w/ Chickpeas & Tomato Sauce

Ingredients
1 lb. Tri-Color bow tie (farfalle) pasta
2 tbs. EVOO
4 cloves garlic, minced
1 can (28 oz.) crushed tomatoes
1 can (15 oz.) chickpeas, drained & rinsed
1/4 tsp. red pepper flakes
salt
1/8 tsp. cinnamon
2 tbs. chopped parsley
 

Instructions
Cook Pasta. When draining, reserve 1 cup H2O in pot.
-Heat large skillet med-high heat, put EVOO in to heat. -Add garlic, cook 2 min. -Stir in tomatoes, chickpeas, salt and red pepper. Simmer 10 min. -Add cinnamon
Toss pasta with sauce, adding pasta H2O to thin the sauce if necessary.
Garnish w/ parsley.
