     Jubilee Jelly

Ingredients
400ml Prosecco or other Sparcling Wine
100ml Elderflower Cordial
3 Tbsp Sugar
1 sachet of Gelatine
2 tbsp warm Water
Edible Flowers
4 Glasses
 

Instructions
Combine prosecco and elderflower cordial in a large pan and bring to the boil. Take of the heat and stir in the sugar until disolved.
In a small bowl sprinkle the gelatine into the warm water and whisk until dissolved completely. Then whisk into the prosecco and set aside to cool.
Pour about 3cm of liquid into each chosen glass, add some flowers and let glasses sit in the fridge. once the jelly has set, pour another 3cm of prosecco mixture, as well as some more flowers and move to the fridge again to set. repeat until the mixture is used up.
