Servings   1 cup

Ingredients
1 cup water
3/4 cup sugar
12 figs, stemmed and quartered
grated zest of 1 lemon or lime
juice of 1/2 lemon
1 cinnamon stick
 

Instructions
Pour the water and sugar into a saucepan and place over medium heat, stirring until sugar has dissolved.
Add the figs to the sugar mixture along with the lemon zest and juice and the cinnamon stick. Stir and bring to a light simmer, leaving the lid off the saucepan.
Cook for about 1 hour or until the mixture has thickened. Remove from the heat and take out the cinnamon stick and let cool.
Store in an airtight container in the refrigerator for about 3 months.
