     Italian Style Potato Salad

Ingredients
500g new or small potatoes, suitable for boiling
4 x shallots, peeled and sliced, lightly cooked in a little olive oil
6 x each- green and black olives, pitted and finely sliced
2 x Tbsp torn basil leaves, plus extra for garnishing
1 x Tbsp pine nuts, lightly toasted
DRESSING-
1/4 cup olive oil
2 x Tbspn balsamic vinegar
 
1 x tsp liquid honey
2 x cloves garlic, crushed
S & P to taste

Instructions
Wash or scrub the potatoes and cook them in boiling, salted water until cooked ( Do not over cook )
Drain well and place them in a large bowl. Toss through the cooked shallots, olives and basil leaves Combine the dressing ingred and season to taste. Pour the dressing over the potatoes and gently combine. Cover the bowl and leave the potato salad to stand at room temperature for at least 30 mins. Garnish with pine nuts and more basil
