1) Coarsely Shred Potatoes and Onion into large bowl half filled
with cold water.
2) Pour into colander lined with cheesecloth, drain thoroughly.
3) Beat Eggs in a large bowl. Add Potatoes and Onion Mixture.
4) Mix in flour, salt, and pepper.
5) Fry in skillet with oil.
6) Let Cool on paper towel covered platter or plate
