Ingredients
1/2 lb broccoli crowns, trimmed, cut into florets
1/2 stick (4T) butter
1 package (8oz) cleaned and cut miropoix
1-32oz carton veggie broth or stock
1 T chopped gresh thyme
6 T flour
3/4 c water
1/2 c fresh heavy cream
1/2 c shredded sharp cheddar cheese
 

Instructions
Clean, trim broccoli. Set aside. Cut remaining stems into 1/2 inch slices. Melt butter in saucepan, medium heat. Stir in broccoli stems and mirepoix. Cover, cook 10mins. Add stock and thyme and cook to boiling. Whisk together flour and water until smooth. Stir into soup. Return to boiling. Cook 1 minute. Remove from heat.
Puree soup carefully in pot with handheld blender until smooth. Which in cream. Add broccoli florets; simmer on LOW 10 min. Season to taste with salt and pepper. Ladle into warmed bowls; sprinkle each serving with cheese.
