Pre-heat oven to 425 degrees F. Combine mixed veggies, soup, rice and water in a large bowl, and stir to mix well. Spoon into a 2-quart shallow baking dish and place the chicken over top. Sprinly with paprika nad pepper, if wanted.
Cover and bake for 40-45 minutes, or until chicken is cooked through and rice is tender.
If you don't have a cover for the pan it's not a huge deal. I haven't covered it and haven't had a single problem. Everything is still tener and juicy once it's done.

It should feed a family of at least 3. If you have a teenaged son though you might want to make more.
