Heat a large non-stick skillet over medium-high heat. Add the pork and cook for 5mins, stirring often, until well browned. Stir in the gravy, ketchup, and potatoes. Reduce heat, cover, and simmer for 10 minutes.
Stir in the mixed veggies and simmer for 10 to 15 minutes.
