Heat a large frying pan with the oil and add the
Garlic Puree.
Stir for a while then add the Mushrooms and cook
until soft and reduced.
Put the Mushrooms in a bowl and leave to cool.
Then fry the onions until softened and add to the
mushrooms.
Add the grated Stilton cheese and breadcrumbs to
the bowl and mix together.
Slice the top off the Beef tomatoes and scoop out
the flesh using a small spoon..
Mash the flesh up using a hand blender or a fork.
Then add it to the mushroom, onion, cheese,
breadcrumb mix.
Scoop the mix back into each Tomato and sprinkle a
little Parsley over the top.
Place the Tomatoes in a pre-heated oven and bake for
about 15 minutes or until the breadcrumbs have
turned golden and crispy.
