For the pastry, blend together all the ingredients in a food processor – do the pulsing speed – don’t want to break down the pastry too much, then divide the dough into two balls and chill them while you make the filling.
For the filling, again, simply mix everything together. I like the ricotta pie simple…no citron…no chocolate chips…just the simple, sweet citrus taste of the pie. Before serving, using a flour shifter take confectioners’ sugar and sprinkle on the pie. Simply Complete~~!
