Break bread into pieces. Cook giblets with salt. Boil covered until cooked. Cut up in pieces.
Cook onion, celery, and butter slowly. Add poultry seasoning and salt. Toss liquid mixture, bread and giblets together. Taste.
If too dry add a little chicken broth.
Use 2 loaves of bread for a 20 pound turkey.
