     Maple Syrup Chicken

Ingredients
2 T maple syrup
1 T soya sauce
Juice of 1 lemon
1 clove garlic - crushed
1/2 t dry chili flakes
1/2 t ground paprika
1/2 t ground nutmeg
2x 100g chicken breasts
salt and pepper
 

Instructions
Mix all ingredients together & marinate chicken in a sealed, non metallic container for at least 2 hours, preferably overnight. Preheat oven to 180/fan 160 Place chicken, reserving the marinade, into a deep baking tray. Cover loosely with foil and bake for 30-35 mins.
In a small saucepan, bring the reserved marinade to the boil, simmer for approx 5 minutes. The sauce should reduce right down to between half and a third of original amount. Serve by pouring the sauce over top of chicken
