|
preheat oven to 325 (or try in crock pot)
season pork with 2 tsp taco seasoning - place on grill and sear all sides - 2 minutes per side
in 9x13 pan - combine enchilada sauce onions, cilantro and rest of taco seasoning
add pork - cover with foil - roast for 25 minutes (until internal temp of 155-160)

in small bowl combine sour cream, mayo, chipotle sauce, chili lime seasoning, and lime juice - mix until blended

|
in large bowl add coleslaw and pour sour cream/mayo mix over top and toss well to coat
cover and refrigerate for at least 1 hour or over night
|
|
|
place tortillas on microwave plate - cover with moist paper towel and heat in microwave on high for 45 sec
slice pork and divide between heated tortillas and top with some of sauce from baking dish, slaw and garnish with lime
