saute 2 finely chopped onions in oil/butter

add 2 cloves garlic, minced

add 1 full can diced tomatoes

keep a second can just in case - 16oz.

take off heat, add 1/2 c rice
|
|
parsley, mint, oregano and basil for flavor

6-8 cored/cleaned bell peppers
