Ingredients
400g cottage cheese/curd cheese
120ml double cream
2 tablespoons caster sugar
80g raisins or sultanas
1 tablespoon walnuts or almonds
 

Instructions
Remove moisture from cheese by seiving. Miz with lightly beaten cream. Add sugar, raisins and nuts. Mix well. Put into a container that allows the mixture to drain. A small colander or flower pot lined with a damp muslin works well. Cover with a plate, put weight on top and leave in the fridge overnight. Turn out onto a plate and decorate with glace cherries and angelica.
Serving Suggestions
The Paskha was traditionally served with an iced fruit loaf called kulich similar to a Sally Lunn
