     Golabki - stuffed cabbage leaves

Ingredients
1 - 1.5kg green cabbage
3 thick slices wood smoked bacon (boczek)
200g white rice/buckwheat/pearl barley (or mixed combo)
1 onion
40g mushrooms
30g (2 tablespoons) margarine/butter
salt and pepper
 

Instructions
Wash and core the cabbage. Boil in salted water for 5 minutes. Boil the bacon and mushrooms in a little water. Boil the rice. Dice the onion and fry in butter. Finely chop the cooked meat and mushrooms. Mix with the fried onion and boiled rice. Season to taste. Take a cabbage leaf and fill it with the stuffing. Fold it into a parcel and tie up with thread if necessary. Continue until all the leaves and stuffing have been used up. Place a few leaves at the bottom of a baking dish and place the cabbage parcels on top. Cover the parcels with the remaining cabbage leaves and add a cup of stock/tin of chopped tomatoes. Place in the oven at 180 degrees for 30 to 40 minutes. Serve hot with a creamy tomato or mushroom sauce.
