     Summer Squash Pickles

Ingredients
8 summer squash sliced
2 1/2 c onions sliced
1 c green peppers
1 Tbls pickling salt
2 c vinegar
3 c sugar
1 1/2 tsp mustard seeds
1 tsp celery seeds
 

Instructions
Cut squash and onions in thin slices. Combine wiht salt; mix well and allow to stand for several hours. Combine remaining ingredients and bring to a rolling boil. Squash and onions should be packed in hot sterlized jars. Pour in pickling solution to within 1/4 inch of jar top. Seal according to manufacturer's directions and process in a boiling water bath 15 minutes.
