     Sadie's Rockin' Roasted Root Vegetables

Ingredients
1 lb. new potatoes, or fingerlings
1 lb. yams or sweet potatoes
3 large carrots
2 medium onions
1 medium red pepper
5-10 cloves garlic, roughly chopped
2 tbsp. olive oil
1 tsp rosemary, finely chopped or whole sprigs
1 tsp oregano, thyme, or any other seasoning you like
 
salt and pepper to taste

Instructions
Preheat oven to 400 degrees, then start chopping-
If you're in a sassy mood, add or substitute with- Shitake or portobello mushrooms Parsnips, rutabaga or beets Brussel sprouts, celery Radishes, diced ginger Anything else you think might work. You'll find out soon enough! Cut larger veggies into 1 inch pieces, of approximately the same size. Garlic can remain whole cloves or be chopped. In a roasting pan, toss vegetables with oil and herbs. Roast 1 hour until tender, slightly browned and naturally sweet, stirring occasionally.
