     Buffalo Chicken Rolls

Ingredients
3 Boneless, skinless chicken breasts
4 square inch Egg roll wrappers
Wing Sauce
Cole Slaw mix
Ranch dressing
 

Instructions
-Either poach or bake chicken and shred -Make wing sauce or use pre-bottled wing sauce and mix in with shredded chicken -Lay egg roll wrappers on counter and put about 3- 4 tablespoons of chicken in the middle -Put about a tablespoon worth of cole slaw mix on top of chicken and put about a half of a tablespoon of ranch on top of that -With wrappers facing you with a corner down, fold up the bottom corner over the food, fold in both sides and roll the bottom up one time. -Keep a cup of water nearby and dab your finger in the water and then blot the top corner of the wrapper that has yet to be folded down. -Fold the entire thing one more time so that the wet top corner completes the fold and will then stick to the bottom.
-Spray oven grates with pam and put rolls directly on the rack sideways so they don't fall in -Put tinfoil on the rack below the rolls so any drippings will land on that -Spray the actual rolls now with pam as well and bake on 400 degrees for 15 minutes
-You can substitute the ranch with blue cheese crumbles but I didn't care for that very much -You can also substitute the ranch with either a cream cheese or mascarpone cheese to give a thicker consistency.
