     Carolina Pulled Pork Sandwiches (Crock-Pot)

Ingredients
PORK-
1 boneless pork shoulder roast (3 1/2 lb.)
1 tsp. seasoned salt
1 tsp. paprika
2 tbs. EVOO
SAUCE-
1 tbs. EVOO
1 small onion, diced
1 cup cider vinegar
 
3/4 cup ketchup
1/3 cup packed light brown sugar
2 tbs. spicy brown mustard
8 sandwich buns

Instructions
PORK- -Rub pork with seasoned salt and paprika -Heat oil in large skillet and brown each side, about 3 minutes each side
SAUCE- -Heat oil in large pot over medium heat -Add onion and cook 5 minutes -Stir in vinegar, ketchup, brown sugar and mustard and bring to a boil, then reduce heat, simmer 5 minutes
-Transfer pork to crock-pot, add sauce, cover and cook high 6 hours or low 8 hours
-Remove pork, shred and put back in with sauce -Top with a coleslaw and serve
