     Scallops w/ Creamy Bacon Corn Sauce

Ingredients
3 ears fresh corn-husks & silks removed
1 tbs. EVOO
1/4 tsp. kosher salt and 1/4 tsp. pepper
3/4 lb. sea scallops
4 slices bacon, coarsely chopped
2 tomatoes
1/2 red bell pepper and 1/2 green bell pepper
1 small yellow onion
1 tbs. blackened seasoning
 
1/2 cup half & half
1 tbs. chives- coarsely chopped

Instructions
-Remove husk/silks off corn and slice kernels of cobs into medium bowl -Cut tomatoes and peppers into small chunks and cut onion into very small chunks, mix all up in small bowl
-Preheat large pan medium high -Season scallops with salt and pepper -Oil in pan, then add scallops, cook 1-2 minutes on each side until golden, opaque and firm
-Transfer scallops to plate and cover to keep warm -Cut bacon into small pieces with kitchen shears and put in same pan, cook 3-4 minutes until crisp. -Drain fat, save 1 tbs. in pan. Stir in pepper/onion/tomato mix and cook 2-3 minutes until soft
-Combine half and half, blackened seasoning and corn in a bowl, add to pan -Reduce heat to medium low and cook 3-4 minutes more, stirring a lot -Transfer corn mix to serving dish, top with scallops and chives and serve.
