Generously season pork chops with S&P and rubbed sage on both sides. Let sit for 20 minutes to room temperature.

Heat EVOO in LARGE skillet (you'll have to sear them in batches if smaller pan) until it's SCREAMING hot (almost smoking).

Place chops in pan and leave alone until they don't stick to the pan. Turn over and repeat. If using a smaller pan, do this in batches.

|
Once seared, place all chops in pan (in layers if you have to) and add water or apple juice to pan (it will bubble and steam a LOT)about half way up the sides of the chops . Lower heat to simmer and cover. Simmer for 25 minutes. Remove from pan and serve.
