1 to 1 1/2 lb chicken breasts or thighs, cut in 1/2 in pieces
1 cup chopped onion
1 15 oz can white beans, drained and rinsed
1 15 oz can black beans , drained and rinsed
1 15 oz can Mexican style stewed tomatoes
2 tablespoons chili powder
pinch of cayenne (optional)
Instructions
In large skillet sprayed with nonstick cooking spray, brown chicken and onion over medium heat. Stir in remaining ingredients; bring to a boil. Reduce to low; simmer for about 40 minutes.
